There are a few recipes I really like here, but here's a new one:
Mix together:
1/2 c butter or shortening (not vegetable oil)
1 c sugar
2 eggs
Add to this:
1 c banana (~3 bananas; I toss browned bananas in the freezer, and when they thaw, they're squishy and don't need chopping)
2 c flour
3/4 t baking soda
1/2 t salt
1 t vanilla
Pour into a greased 8 x 4 inch pan and bake 45-60 minutes at 350F, or until a fork stuck in the middle comes out clean.
